Batch cooking a double or triple batch of sausages helps keep my morning easy. They can be paired with some fruit, a smoothie or an egg for a quick and healthy breakfast. The chicken sausages are very lean. You don't want to overcook them, or they tend to get tough.
INGREDIENTS
1 Tablespoon of coconut oil
1 pound of ground chicken
1/2 cup of unsweetened applesauce
1/2 teaspoon of garlic powder
1 teaspoon of fresh or 1/2 tsp ground ginger
1/2 teaspoon of salt
1/4 teaspoon of red pepper flakes (omit for AIP)
Combine all of the ingredients and form into 6-8 patties.
Heat a skillet or griddle on medium high and melt the coconut oil. Cook the patties for 2-4 minutes on each side until brown and cooked through.
For batch cooking:
Double or triple the recipe and freeze extras in single layers between parchment paper.
